1 large head cauliflower
1/3 cup mayonnaise
1 tbsp dry yellow mustard powder
1 cup sharp cheddar cheese
Clean leaves and excess stalk from bottom of cauliflower. In large microwave safe baking dish, place cauliflower top-side up in an inch of water. Cover and microwave on high in 2-3 minute increments until cauliflower is fork-tender.
Meanwhile, combine mayonnaise and mustard powder in small bowl. When Cauliflower is tender, drain excess water and spread mayonnaise mixture all over. Top with cheese and broil for 1-2 minutes until cheese is melted and bubbly.
Cut into quarters, serve and enjoy!
A little history
This recipe has been in my family for my entire life, and most of my sister's. When microwaves first came out in the late 70's and early 80's they were so new, and people didn't quite know how to effeciently use them, that large appliance stores, like Western Appliance in San Jose, offered classes to learn recipes and tips for how to cook with a microwave.
My parents spent between $400 and $500 on their new microwave around 1982. Western Appliance was practically the only large, independent appliance store in San Jose, so my parents purchased their new microwave through them. Western offered the class, in a kitchenette type "classroom" and this recipe was one of the first they learned. It has been a staple in my household ever since.
